This group of farmers produce only organic coffee in accordance with their respect for mother nature. Their focus is to rebuild and strengthen indigenous communities and culture and gain economic resilience after decades of decline and neglect.

Profile – Sweet, soft citric acidity, complex notes of caramel and vanilla

 

 

Guatemala â€“ Huehuetenango - Gyaya'b

Producer – 612  small holder producers from Jacaltenango & Huehuetenango

Varietals – Typica, Caturra, Bourbon & Catuai

Process – Fully washed

Based in western Huehuetenango, this producer association supports its members with high prices, technical assistance, and critical loan funding. Over the past decade, the members of Guaya’b have built and developed a wet mill where they are able to grade, pulp, ferment and dry a large proportion of their coffee to a very high standard. The rugged and remote mountain landscape of Huehuetenango is hot and dry owing to the winds that blow over the border from neighbouring Mexico. This allows coffee to be cultivated at up to 2000 meters without fear of frost. The small dense beans are predominantly of the Bourbon variety providing a very clean and lively cup. 

Profile – Mild raspberry fruit aroma with a honey sweetness, the finely balanced and bright acidity combines well with a sweet golden raisin flavour.
