Group Italian Cooking Class: Bruschetta, Caponata, Salad + Chicken Pasta

- 2 pieces of day old Italian style bread cut into 1/2” slices
-  1 clove garlic, crushed
- olive oil
- Mozzarella
- diced tomato
- shredded basil
- pinch of cracked pepper Caponata


- 2 small eggplants, cubed
- pinch of salt
- 1/2 c olive oil
- 2 onions, chopped
- 500g (2c) tomatoes, chopped
- 2 peppers, chopped
- 2 sticks celery, chopped
- 4Tb vinegar
- 1Tb sugar
- 2 cloves garlic, crushed
- 10 green olives
- 1Tb capers
- Salt and pepper to taste Orange & Radicchio Salad


- 1-2 heads of radicchio
- 1 orange
- 1 red onion
- Extra virgin olive oil
- Red wine vinegar (or another flavored vinegar)
- 1 garlic clove, crushed
- Salt and pepper Chicken Pasta


- 1 pkt Chicken pieces
- 1/2 bunch Asparagus cut into 1” pieces
- 1 Lemon zest and juice
- Basil 1/4c shredded
- 4 Shallots finely sliced
- 2 cloves Garlic
- 3Tb butter
- 1pkt short pasta
- 1/3 c shaved parmesan cheese
