Masala Dabba

When I went for my exchange semester to Canada, my mother insisted I take a with me. I scoffed at her then but when I was in my flat alone in Toronto, that box became my lifeline. It helped me recreate familiar flavours and when I missed mum too much I'd open the glass lid and simply inhale the aroma of home.

A well-stocked masala dabba is the foundation to all Indian home cooking.

Depending on the part of India you live in, the seven steel bowls would be filled with the core spices you use the most.

In the north this may be Star Anise, Cumin, Fenugreek Leaves while in the south it may be Fennel Seeds, Green Cardamom and Urad Dal. The Gujarati's like to stock theirs with Mustard Seeds and Asofoetida while if you're Parsi like me then your box will have some Dhansak masala and a blend of Coriander-Cumin seeds.
